With Tofu Crumble, Veggies & Sour Cream

An amazing plant based version of the traditional nacho cheese sauce, packed full of goodness and flavour. It is quite marvellous how a few root vegetables and some spices can transform into full on cheesiness! Serve it with our delicious tofu crumble, tortilla chips, fresh veggies and any trimmings of your choice.
Ingredients
For the nacho cheesy sauce
2 large potatoes, peeled & chopped
2 medium carrots, peeled & chopped
2 roast peppers from a jar
30g nutritional yeast
60ml rapeseed oil (or any neutral oil)
Juice of half a lemon
125ml boiled water (from the cooked veggies)
1tsp each of vegetable bouillon powder, onion powder, sweet paprika, oregano, cumin, chicken seasoning
1/2tsp salt
For the tofu crumble
1tbsp rapeseed oil
300g smoked tofu, crumbled
1 small onion, peeled & finely chopped
2 heaped tbsp tomato purée
1tbsp soy sauce
1tsp each of vegetable bouillon powder, sweet paprika, onion powder, oregano
2tbsp fresh parsley, finely chopped

Nacho Tortilla chips (we used Hippeas)
Iceberg lettuce
Ripe avocados
Cucumbers
Cherry tomatoes
Red peppers
Olives
Fresh Jalapeño peppers
Plant based sour cream (we used Oatly)
Fresh chopped parsley
Freshly ground black pepper
Method
For the nacho cheesy sauce, place potatoes and carrots in a saucepan and boil until soft. Once cooked, reserve 125ml of the cooking water. Transfer the veggies into a food processor or blender, along with the reserved water and all the other ingredients. Blend for a few minutes until very smooth and cheesy.
For the tofu crumble, heat the oil in a frying pan and fry the onion for 5 minutes over gentle heat until soft and translucent. Turn the heat to high and add the crumbled tofu and the remainder of the ingredients. Stir fry for a few minutes, mixing constantly, till the crumble has browned and is fragrant.
Serve with chopped veggies and other accompaniments of your choice. Enjoy!
Notes
This cheesy sauce can be used in other recipes, accompanying pasta, rice or any dish that goes well with cheese.
Any left overs may be stored in the fridge for a few days and reheated as needed.
