Light Saffron Sauce





Light Saffron Sauce
Yields 250g
Plant Based / Dairy Free / Nut Free / Gluten Free / Fat Free
Ingredients
1/2tsp saffron strands, soaked in 2tbsp boiling water
250g plant based greek style yogurt (we used Alpro Greek)
2tbsp fresh parsley, finely chopped
1/2tbsp maple syrup
Juice & zest of 1 lemon
1tsp apple cider vinegar
1tsp onion powder
1tsp veggie stock powder
salt & pepper to taste
Method
Whisk all ingredients together in a bowl, until you have a smooth, thick vibrant sauce.
Can be served hot or cold.
If serving hot, place in a small saucepan and gently warm through.
Perfect with a variety of dishes like salads, steamed or roasted veggies, as a dip for chips, as a pasta sauce, it will elevate any simple dish instantly. Enjoy!
