Hearty Veggie Stew

Serves 8-10

This is a beautiful, hearty recipe, packed full of flavours, nutrients and colours! We like to mix it with a grain; pasta, quinoa, orzo, couscous, cracked wheat, or rice, are some ideas, but it is delicious on its own too.

Ingredients

2 sweet potatoes, peeled and chopped

3 white potatoes, peeled and chopped

2 leeks, chopped

1 large white onion, quartered

2 celery stalks, chopped

4 carrots, chopped

3 beetroot, peeled and chopped

1 red pepper, chopped

1 cup split red lentils

3tbsp vegetable stock powder

1tbsp turmeric

1tbsp curry powder

1.5lt of water

3-4 kale leaves, stalks removed and leaves chopped

A small bunch of parsley, finely chopped

Method

In a large deep pan, place all the ingredients apart from the kale and the parsley. Pour the water and bring to a boil. Give everything a good stir and cover. Reduce the heat to a simmer and cook for about 30 minutes, stirring occasionally. Remove the lid and continue to cook until the veggies are very soft, the lentils have dissolved and the stew has thickened. Turn the heat off and stir in the kale and the parsley. Season to taste.

Enjoy!

This stew is even better the day after and freezes really well too.
