Fresh mushrooms are so pretty. They are the corals of the forest.

 If you come across some lovely fresh mushrooms, you really need very little to create a quick, beautiful meal. 

Sauté with a few cloves of crushed garlic, some freshly chopped rosemary, salt and pepper and a drop of olive oil. Do not overcook, but rather wilt the mushrooms till they soften and release their wonderful aromas. Accompany with some rice or other grain, or even just a slice of toasted bread.

Heaven.

Ingredients

1tsp olive oil

600g assorted oyster mushrooms 

3 cloves of garlic

1tbsp fresh rosemary leaves, chopped

Salt & pepper to taste

To Serve

Cooked rice, quinoa, pasta, or toasted bread

Method

Pull the mushrooms apart and discard the harder ends of the stems.

Place them in a large frying pan with the olive oil, the crushed garlic, the chopped rosemary leaves and the salt & pepper. 

Sauté over medium/high heat until the mushrooms soften and shrink and the garlic and rosemary are fragrant. It shouldn’t take longer than a few minutes.

Serve with some cooked rice, quinoa, pasta or simply laid on a slice of toasted bread. Enjoy!
