Apple & Macadamia Nut Crumble

A familiar, classic pudding, with our luxurious touch. Adding macadamia nuts into the crumble, gives a sophisticated note of crunchy decadence. The use of coconut sugar lends a toffee-like richness, while at the same time keeping this lovely apple crumble refined-sugar free. So simple to prepare, it only takes about 15 minutes to get it oven ready.
Ingredients
For the apple mixture
5 medium apples of choice*, peeled & thinly sliced
2tbsp coconut sugar
2tbsp plant based butter, melted
1tbsp ground cinnamon
For the crumble
170g unbleached plain flour
120g coconut sugar
120g cold, plant based butter
100g raw, unsalted macadamia nuts, finely chopped
A good pinch of salt
Icing sugar to dust if desired
Method
Preheat the oven to 180C.
To prepare the apple mixture, place the sliced apples, coconut sugar, butter and cinnamon in a bowl and use your hands to gently mix through. Transfer the mixture into a lined oven-proof tin around 20cm in diameter and set aside.
For the crumble, place all ingredients in a medium bowl and rub through with your hands. Work the butter into the dry ingredients, until you get a sandy consistency.
Spoon the crumble evenly over the apple mixture. Loosely cover with damp crumpled baking parchment and bake in the middle of the oven for 40 minutes. Cook uncovered for a further 10 minutes, until golden brown. Allow to cool on a rack slightly before serving. Sprinkle with icing sugar if desired. Enjoy!
Notes
Some people prefer to use cooking apples, others like the sweeter varieties. This is a recipe which will work with either, so you can use any apples you have to hand.
To make gluten free, simply switch the same quantity of flour to a gluten free version.
Use any of your favourite unsalted nuts in place of the macadamias.
The use of coconut sugar does make this pudding extra special, but you could use soft brown sugar, or any other sugar you prefer.
Lining the tin or dish as shown, allows for lifting the crumble out and onto a serving plate, but it can also be made in a regular unlined pie dish. If you are lifting it out, allow to cool for longer, so that it has the chance to set.
