Almond Tahini Cookies
Makes 18 - 20 cookies
Plant Based / Dairy Free / Gluten Free / Refined Sugar Free
Almond flour, tahini, maple syrup, a drop of plant milk and vanilla and a pinch of baking powder and salt. With just these few wholesome ingredients, and about 20 minutes of your time, you can make these delightful almond cookies that everyone will adore. The have a delicate crust and a soft, chewy, macaroon-like centre. Nutritious, plant based, dairy free, gluten free and refined sugar free. Simply beautiful!
Ingredients
220g almond flour
100ml maple syrup
80g tahini
20ml unsweetened almond milk
1tsp vanilla extract
1/2tsp baking powder
A pinch of salt
Method
Preheat the oven at 180C.
Place all ingredients in a food processor and pulse until mixture comes together.
With damp hands roll spoonfuls in desired size and place on a lined or greased baking tray. (We make them around 20g each to get the size you see in the photos). Flatten them ever so slightly with your hand, so they don’t roll about.
Bake for 12 minutes in the middle of the oven, until they are lightly golden.
They will still be soft when you are them out, but will harden as they cool.
Allow them to cool at least slightly before serving.

Notes
If your mixture is too wet to handle and roll into balls, add a little more almond flour.
You can also add chopped nuts, raisins or chocolate chips in the dough.
These cookies will keep in a sealed container for a week.
