You know those moments, that usually arise sometime after dinner, when you crave something or other? So you go through the fridge, the cupboards, the pantry, the fruit bowl…but nothing is quite inspiring enough, right?
It’s during those moments, when treats like these come into existence around our home. Puff pastry, chocolate spread, peanut butter and a pecan nut in the centre for crunch. Oh! And a dusting of icing sugar for beauty.
It was really hard trying to keep Noush away from these, while taking the pictures:)
Peanut Butter, Chocolate & Pecan Half Moons
1 sheet of store bought vegan puff pastry
A few teaspoons of peanut butter (smooth or crunchy)
A few teaspoons of vegan chocolate spread
A few pecan nuts
A little water
A sprinkle of unrefined icing sugar
🥜Preheat the oven at 180C.
🥜Line a baking tray with a piece of baking paper.
🥜Lay out your puff pastry sheet. Using a round pastry cutter, cut 12 circles and remove any trimmings.
🥜Dollop a small teaspoon of peanut butter and a small teaspoon of chocolate spread in the centre of each circle. Place a single pecan nut over the spreads.
🥜Wet the rim of each circle with a little water, to help seal the pastry.
🥜Fold each circle in half, then press the edge all around, sealing it with your fingers.
🥜Place the half moons onto the lined tray and bake until they look ready, puffed up and lightly golden.
🥜Remove them from the oven and dust them with a sprinkle of icing sugar.
Careful not to get burned, trying to devour them too soon!
